According to Sara, who tends INMED’s aquaponic system at Rand Vaal Primary School in a disadvantaged community of Gauteng Province, South Africa, cucumber jam makes a delicious spread for sandwiches and baked goods. Sponsored by Air Products, the aquaponic system provides a bounty of produce for the school’s meals. Sara also runs the school’s cafeteria and is quite creative in how she gets the children to eat their veggies.
