Reduce Food Waste

Ingredients:

2 cups banana peel
1½ cups water
4 egg yolks
4 egg whites
2½ cups of sugar (less if desired)
3 cups wheat flour
5 tablespoons butter
2 tsp of baking powder
Powdered sugar

In a blender, puree the banana peels with 1½ cups of water. In a bowl, blend butter, sugar and egg yolks. Blend in the pureed banana peels. In a separate bowl, mix the dry ingredients. Combine the wet and dry ingredients, blending until smooth. Whip the egg whites and blend into the batter. Pour into a greased glass baking dish and bake at 350 degrees for 35 minutes.
