Feeling in the mood for a comforting but healthy stew but aren’t sure where to start? If you’re INMED South Africa’s KG Manyaga, you start with a freshly caught catfish from an INMED Aquaponics system! In a stewpot over medium heat, saute diced onion, carrot and bell peppers in vegetable oil until tender. Add minced garlic, paprika, cumin, coriander and turmeric and cook, stirring constantly, for 2 minutes.
Add a can of diced tomatoes, broth, tangerine zest and bay leaf. Cover and bring to a boil. Add diced potatoes and cook for 10 minutes.
Season your cleaned and diced catfish with salt and pepper and add to your stew. Cover and simmer until the potatoes are tender and the fish is cooked, about 7 to 10 minutes depending upon the thickness of the fish. Stir in some fresh cilantro and crushed red chili flakes. Enjoy!
